Simple Pesto
Ingredients
- 3 Tbsp Olive Oil
- 2 cloves Garlic
- 2.5 oz Grated Parmesan
- 1 oz Pine Nuts
- 5 oz Basil Leaves
- Salt (to taste)
- Ground Black Pepper (to taste)
Instructions
- Wash and dry basil and garlic and check for blemishes, or spots.
- Preheat saute pan on medium high heat.
- Toast the pine nuts until lightly browned, and allow to cool.
- Rough chop the basil and garlic for easy blending.
- In a food processor, blend the basil leaves with the garlic.
- Add pine nuts and grated Parmesan.
- Slowly add the oil, while blending. Season to taste. Use approximately 1/4 tsp of salt, and a few grinds of pepper to start. Adjust as needed.
- Store in an airtight container in the fridge for at least one hour for flavors to marry.
- If you like a slightly smoother, thinner pesto, add more olive oil to thin out the finished product.
This is another item that I recently made in my culinary program. The basil tastes so fresh, and the balance of the flavors are perfect. Serve it with your favorite pasta, with seafood, chicken, or just about anything! Enjoy!
